Meat Sauce
  • 2 lbs. ground beef
  • 2 large cloves minced garlic
  • 1 T minced parsley flakes
  • 2 T basil or oregano
  • 1 tsp salt
  • 1 lb can whole tomatoes
  • 2-6 oz cans tomato paste
Cheese Sauce
  • 3 cups Swiss Valley Cottage cheese
  • 2 beaten eggs
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 T minced parsley
  • 1/2 cup grated Parmesan cheese
  • 10 oz. wide egg noodles
  • 1 lb. Swiss Valley Farms shredded Mozzarella cheese

Brown meat slowly; spoon off excess fat. Add next six ingredients of meat sauce recipe. Simmer uncovered until sauce is thick, about 45 minutes to an hour. Stir occasionally. Cook noodles until tender in boiling water to which 1 T oil has been added. Drain. Rinse in cold water. Combine cottage cheese with eggs and seasonings for cheese sauce. Also combine parmesan cheese. Place 1/2 cooked noodles in large casserole dish or 13x9x2 baking dish. Place 1/2 cottage cheese mixture, 1/2 Mozzarella, & 1/2 meat sauce in layers. Repeat layers. Sprinkle with additional cheese if desired. Bake at 375 for 30-45 minutes. Let stand 15 minutes before cutting & serving so lasagna can set.
