Mashed Potato Casserole

  • 8 large potatoes (cooked & mashed with milk & butter)
  • 8 oz. Swiss Valley Farms cream cheese
  • 16 oz. Swiss Valley Farms sour cream
  • 1/2 cup onions (finely chopped)
  • 1 cup Swiss Valley Farms shredded Cheddar cheese

Prepare potatoes as usually done for mashed potatoes. Add cream cheese and sour cream. Whip with electric mixer. Pour into greased 2 1/2 - 3-quart greased casserole. Refrigerate overnight. Bake at 350 degrees for 30 minutes. Add Cheddar cheese around outer edge during last 10 minutes of cooking.
