COCADA (Coconut Candy)

  • 1/4 cup Swiss Valley Farms butter
  • 2 cups confectioners' sugar (sift if lumpy)
  • 1/4 cup Swiss Valley Farms light cream
  • 3 cups grated coconut
  • 6-oz package semi-sweet chocolate pieces
  • 2 tsp shortening

Melt butter in saucepan. Gradually stir in sugar, cream and coconut. Remove from heat; drop by teaspoons onto waxed paper. Chill; shape each mound into peak. Melt chocolate and shortening in top of double saucepan over hot water. Dip each peak in chocolate; cool on waxed paper.
