Pecan Bars

Ingredients
Crust
  • 2 cups flour
  • 1 cup brown sugar
  • 1/2 cup shortening
  • 1/2 cup Swiss Valley Farms butter
  • 1/2 tsp salt
  • 1 egg yolk
  • 1 tsp vanilla extract
Filling
  • 4 eggs
  • 3/4 cup sugar
  • 1 1/4 cup dark corn syrup
  • 1/2 cup melted Swiss Valley Farms butter
  • 1/2 cup flour
  • 1 tsp. Vanilla extract
  • 2 cups chopped pecans


Directions
CRUST: In large bowl, combine all crust ingredients. Press dough evenly into bottom of jelly roll pan. Bake at 350 for 12-15 minutes. Bake until light brown. FILLING: Combine and beat well the eggs and sugar. Stir in corn syrup and melted butter. Blend well. Mix in flour and vanilla. Stir in pecans. Pour filling over warm crust. Bake 15 - 20 minutes more.
