"Sunday Morning" Apple Muffins

Ingredients
  • 1 cup Swiss Valley Farms buttermilk
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 1/2 cups flour
  • 1 1/2 brown sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 1 1/2 cups chopped (peeled) apples. Delicious are best.
  • 1/2 cup chopped pecans


Directions
Combine first 5 ingredients. Add this to brown sugar, oil and egg. Stir into flour. Fold in apples and pecans. Fill muffin papers or pans 1/2 full. Bake at 350°F for 25 to 30 minutes. Yields 2 1/2 dozens.
