Spicy Double Corn Bread

  • 1 cup yellow corn meal
    1 cup all-purpose flour
    2 tbsp. sugar
    1 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    1 cup (4oz.) shredded Jalapeno Jack cheese
  • divided
    1/2 cup well-drained Mexicorn
    1 cup Swiss Valley Farms buttermilk
    1/4 cup (1/2 stick) Swiss Valley Farms butter
  • melted
    1 egg
  • slightly beaten

Preheat oven to 400?F. Combine dry ingredients in medium-sized mixing bowl. Stir in 1/2 cup cheese and corn. Combine buttermilk, butter and egg. Stir into dry ingredients until well combined. Pour batter into buttered 8 inch square baking pan. Bake 25-30 minutes, or until wooden pick inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Return the corn bread to the oven for 3-5 minutes or just until cheese is melted. Serve warm.
