Autumn Apple Salad

  • 1 (20 oz.) can crushed pineapple (undrained)
  • 2/3 cup sugar
  • 1 (3 oz.) pkg lemon flavored gelatin
  • 1 (8 oz.) pkg plain cream cheese (softened)
  • 1 cup diced (unpeeled) apples
  • 1 cup diced celery
  • 1 cup chopped nuts
  • 1 cup Swiss Valley Farms whipped cream for topping.

In a saucepan, combine pineapple and sugar. Bring to a boil for 3 minutes. Add gelatin; stir until dissolved. Add cream cheese, stir until thoroughly combined. Cool. Fold in nuts, apples, celery and whipped topping. Chill until firm in a 9 X 9 dish. Note: I double this recipe to make a 9 x 13 dish. It's a refreshing salad and doesn't take long to prepare.
