Double-Cheese Meatloaf

  • 2 lbs. lean ground beef
    1 med. Onion
  • chopped
    3/4 cup (3oz.) shredded Cheddar cheese
    3/4 cup fresh bread crumbs
    1/2 cup Swiss Valley Farms milk
    1/4 cup grated Parmesan cheese
    1 egg
  • lightly beaten
    1 clove garlic
  • minced
    1 tsp. dried thyme
    1/2 tsp. salt
    1/4 tsp. pepper
  • ?-cup bottled chili sauce ? cup (1oz.) shredded Cheddar cheese

    Preheat oven to 350?F. In large bowl, combine all meatloaf ingredients, mixing lightly, but thoroughly. Shape meat mixture into 9 x 5 inch loaf on rack of broiler pan. Bake 60-65 minutes or until meatloaf is cooked to medium doneness (160?F). spoon chili sauce over top of meatloaf during last 10 minutes of baking. Remove from oven. Sprinkle with remaining cheddar cheese and bake until cheese is melted, about 1-2 minutes. Let meatloaf stand 10 minutes before slicing. Sprinkle with additional cheese, if desired. Makes: 8 servings.
