Spinach Breakfast Casserole

  • 4 cups seasoned croutons
  • 1 lb. cooked breakfast sausage or crumbled bacon
  • 1 cup chopped fresh spinach
  • 6 eggs
  • 2 cups Swiss Valley Farms milk
  • 1 can cream of mushroom soup
  • 1 small can mushrooms (drained)
  • 2 cups Swiss Valley Farms shredded Cheddar or Monterey Jack cheese
  • 1/4 tsp dry mustard

Spread croutons into a greased 9 x 13-inch pan. Spread sausage or bacon on top, followed by spinach. Beat eggs, milk, soup, mushrooms, 1 cup of the shredded cheese and dry mustard until well mixed. Pour over layers. Cover and refrigerate 8 to 24 hours. Uncover and bake at 350 degrees for 40 minutes. Sprinkle with remaining 1 cup of cheese and return to oven for 10 minutes longer or until it bubbles and the center is set. Let stand 10 minutes before serving.
