Eggnog Cheesecake

  • 2 c. graham cracker crumbs
  • 6 T. butter melted
  • 1/2 t. Nutmeg
  • 4 (8 oz.) Swiss Valley Cream Cheese softened
  • 1 c. sugar
  • 3 T. Flour
  • 3 T. Rum
  • 1 t. Vanilla
  • 2 Eggs
  • 1-1/2 c. Swiss Valley Eggnog

Heat oven to 325 F. Crust: Mix crumbs, butter, and nutmeg. Press on bottom and sides of 9 x 13 pan. Bake 10 minutes.

Filling: Beat cream cheese, sugar, flour, rum and vanilla until well blended. Add eggs, one at a time, mixing at low speed after each addition, just until blended. Blend in 1-1/2 c. eggnog. Pour into crust.

Bake about 1 hour depending on oven or until center is almost set. Refrigerate 4 hours or overnight. Garnish with Swiss Valley Heavy Whipping Cream, ground nutmeg and with sugar, depending on how sweet you like your whipping cream.
