Ingredients
Crust:
  • 1/2 cup (1 stick) Swiss Valley Farms butter
  • 2/3 cup firmly packed brown sugar
  • 2 cups flour
  • 1 cup chopped pecans
  • 1/2 cup red currant jelly
Filling:
  • 16 oz. Swiss Valley Farms cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup Swiss Valley Farms milk
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract


Directions
For crust, cream butter; gradually add brown sugar and flour. Blend until mixture resembles cornmeal. Stir in pecans. Reserve 1 1/2 cups of mixture for topping. Press remainder onto bottom of a 13 x 9-inch baking pan. Bake in preheated 350?F oven for 15 minutes. Cool 15 minutes. Spread jelly over crust.
For filling, beat together cream cheese and sugar. Beat in eggs and milk. Add lemon juice and vanilla. Turn into pan; sprinkle with reserved crumb mixture. Bake in 350?F oven for 35 minutes. Cool on wire rack; cut into bars. Store in refrigerator. Yield: 36.
