Rice Pudding

  • 8 cups Swiss Valley Farms milk
  • 1 cup sugar
  • 1/2 tsp. salt
  • 2 large eggs (well beaten)
  • 2 tsp vanilla extract
  • 1 cup regular rice (uncooked)
  • Sugar and cinnamon for topping

Combine milk, sugar, salt and rice in a large saucepan; bring to a boil. Reduce heat and cook covered until rice is tender. Add some of the hot rice mixture to beaten eggs and vanilla. Add egg mixture to saucepan and cook slowly until mixture thickens. Pour pudding into shallow pan and sprinkle generously with sugar and cinnamon mixture. Serve plain or with whipped cream.
