Ummmmmm - Buttermilk Pie

  • 1 baked 9-inch pie shell
    • 2 cups Swiss Valley Farms buttermilk
    • 2/3 cup white sugar
    • 3 tbl flour
    • 3 egg yolks
    • Pinch of salt
    • 1 tbl Swiss Valley Farms butter
    • 1 tsp vanilla extract
    • 3 egg whites
    • 1/2 tsp cream of tartar
    • 6 tbl white sugar

    FILLING: heat 3/4 cup buttermilk in saucepan. Do not boil. Mix together sugar, flour and salt. Add egg yolks and remaining 1 1/4 cups buttermilk. Mix well and add to heated buttermilk. Bring to a boil and add butter. Cook on low heat for 5 minutes or until it begins to thicken, stirring constantly. Remove from heat and add vanilla. Mix well.Pour filling into baked pie shell. Top with meringue, spreading right to the outer edges of pie shell. Bake in a 400° F oven for 8 minutes or until nicely browned.
