Rum Glazed Apple Cheesecake

Ingredients
Crust
  • 1 1/2 cup graham cracker crumbs
  • 3 Tbl sugar
  • 1/4 cup Swiss Valley Farms butter (melted)
Filling
  • Two 8-oz pkgs cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
Topping
  • 4 cups (peeled) thinly sliced Macintosh apples
  • 1/2 tsp cinnamon
  • 1/2 cups pecans (chopped)
  • 1/2 cup sugar
Glaze
  • 1/3 cup apple jelly
  • 1 Tbl rum


    Directions
    For crust, combine crumbs, sugar and butter. Press into bottom of 9-inch spring form pan. Bake 10 minutes at 350° F. For filling, combine cream cheese and sugar, mixing at medium speed until well-blended. Add eggs, mixing well. Blend in vanilla. Pour over baked crust. For topping, toss apples, cinnamon and sugar. Spoon apple mixture over cream cheese. Sprinkle with pecans. Bake 70 minutes at 350°. Remove from oven. For glaze, heat jelly and rum together. Spoon over cheesecake. Cool. Loosen rim and remove. Refrigerate. Serves 12.
