Lemon Cheesecake

  • 1 pkg lemon gelatin
  • 1 cup water
  • 3/4 cup sugar
  • 1 (8 oz) pkg. cream cheese
  • 3 tbl lemon juice
  • 1 cup Swiss Valley Farms whipping cream
  • graham cracker crust (size 8 1/2 x 11 inch)

Dissolve lemon gelatin in 1 cup boiling water. Add sugar and cream cheese. Beat well and add lemon juice. Chill until it begins to congeal. Fold in Swiss Valley Farms whipping cream, whipped. Put in a graham cracker crust in an 8 1/2 x 11-inch pan. Chill.
