Cottage Cheese Fruit Bread

  • 6 tbsp. (3/4 stick) Swiss Valley Farms butter
    1/2 cup firmly packed brown sugar
    2 eggs
    1 tbsp. grated lemon peel
    1 tbsp. grated orange peel
    1 1/2 cups Swiss Valley Farms cottage cheese
    2 cups all-purpose flour
    2 tsp. baking powder
    3/4 tsp. salt
    3/4 tsp. baking soda
    1 cup finely chopped mixed dried fruit (including raisins)
    1/2 cup chopped pecans

    Preheat oven to 350? F. Cream butter in a large mixing bowl; gradually add sugar and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add lemon and orange peels and cottage cheese; beat well. Combine flour, baking powder, soda and salt; add to creamed mixture. Mix just until blended. Fold in dried fruit and nuts. Turn into one buttered 9x5 inch or two 81/2 x 41/2 inch loaf pans. Bake 45 to 50 minutes. Remove from pan and cool completely on wire rack.
