Blueberry Butter Muffins

  • 11/2 cups all-purpose flour
    1/3 cup plus 2 tbsp. sugar
    11/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    3/4 cup Swiss Valley Farms buttermilk
    1 egg
  • beaten
    1/4 cup Swiss Valley Farms butter
  • melted
    1 cup fresh or frozen blueberries *

Combine flour, 1/3 cup of the sugar, the baking powder, baking soda and salt in large bowl. Add combined buttermilk, egg and butter, stirring just until moistened. Toss blueberries with remaining 2 tbsp. sugar; carefully fold into batter. Spoon batter into 12 buttered muffin cups. Bake at 400 ?F for 15 to 20 minutes or until golden brown. Makes 12 (2 1/2 -inch) muffins. * Do not thaw frozen blueberries.
