Peanut Butter Bran Muffin

  • 1 1/2 cups bran cereal
    1 cup golden raisins
    1 cup boiling water
    1/2 cup honey wheat germ
    2 1/4 cups Swiss Valley Farms buttermilk
    1 cup honey
    2 eggs
    1/2 cup chunky peanut butter
    1/3 cup Swiss Valley Farms butter
  • melted
    13/4 cup all-purpose flour
    3/4 cup whole wheat flour
    21/2 tsp. baking soda
    1/2 tsp. salt

    Preheat oven to 375 ?F. Combine bran, raisins, boiling water and wheat germ in medium-sized bowl. Let stand 10 minutes. Meanwhile, combine buttermilk, honey, eggs, peanut butter and butter in a large bowl. Stir in bran mixture. Mix in dry ingredients. Fill paper-lined 2 3/4 inch muffin cups three-fourths full. Bake 20 to 25 minutes, or until golden. Cool in pan 10 minutes. Remove from pan and let cool completely on wire rack. Muffins can be frozen up to one month.
