Swiss

We have the 'eye' for it!

Swiss Valley has been producing premium Swiss cheese for over 30 years. Our experience has made us a leader in the manufacturing of one of the most difficult of all cheeses to produce. Our Swiss cheese is characterized by its golden color and sweet, nutty Swiss flavor. To ensure we meet our customers' unique specifications, cheese is graded in three areas: Initial, Final and Table.


Initial

Swiss cheese begins to form eyes (holes) from 28 to 40 days. The Swiss is graded and sent to the warehouse to age. Cheese must be at least 60 days old to be sold.


Final

We grade our blocks again before going to our customers who require whole block Swiss (approximately 100 pounds). Blocks not meeting our customers' standards are assigned a different grade.


Table

We cut our 100 pound blocks into 7 pound RWT sandwich cuts, 16 pound RWT high cut loaves and/or profiled cuts for efficient slicing. Each cut is individually graded before being packaged and shipped to our customers.
